Dennis Huwaë Daalder
For years Dennis Huwaë (1984), cycled from Zaandam to Amsterdam in the early hours every night to work the breakfast service at the renowned Hotel Okura Amsterdam. From there, he worked himself up through the Michelin-starred kitchens of Ciel Bleu, Brouwerskolkje and &samhoud places (now &moshik). He has been patron-cuisinier of Daalder in Amsterdam since 2016, became Gault&Millau’s Young Talent of the Year 2018 and continues to impress his fans with star-worthy dishes served in a relaxed environment.
After proving his mettle in Michelin-starred establishments, Dennis has completely reinvented himself as a chef at Daalder. The kitchen may be small, the prices may be relatively modest, but his class and ambition shine through in his accomplished cooking. All of Dennis’ dishes are completely original. To achieve this, his chefs reject any idea that feels even a little familiar. One of the first dishes that wasn’t vetoed by his staff – langoustine two-ways, with onion and broccoli – is still on the menu today.
