Every day is a banquet

“The restaurant really is in the middle of nowhere: you could fire a cannon here, and it’s the surroundings that make De Kromme Watergang unique. My son Tom and I see it as a challenge to keep discovering new things: there’s still lots to find in the sea and the countryside. You can also work magic with vegetables and herbs, and we make the most amazing things together. I enjoy every day, and I like to convey that to our guests.”

Oysters and gin

“I never tire of oysters. There are so many amazing combinations you can make, really fantastic. We now have one with our own gin. The two go so well together that the oyster almost slurps up the gin.”

Edwin Vinke (b. 1967) has been patron cuisinier of De Kromme Watergang, in Hoofdplaat, for twenty-three years. The restaurant has two Michelin stars and tells the story of a chef’s passionate love for his native soil. After years of hard work, Vinke earned his first star in 2005, and the title of SVH Master Chef in 2008. After another string of successes, he was named chef of the year by Gault&Millau and received his second Michelin star in 2011.
