The Holterberg hill in the Sallandse Heuvelrug National Park may be only 73 meters high, but the ambitions of Erik de Mönnink (1970) have always reached to the heavens. Once an ambitious disciple of Cas Spijkers, who wanted nothing more than to own his own restaurant or to become SVH Master Chef, Erik eventually achieved both goals. In 2006 he became patron cuisinier of hotel-restaurant De Swarte Ruijter in Holten and since 2015 he’s also been able to add a Michelin star to his name.
