Pure flavours

“Quality always wins the day. We keep our dishes as uncomplicated as possible, because when you use the very best products, the pure flavours speak for themselves. I’m a Dutch eel ambassador, and the dish we call ‘Giethoorn & Tokyo’ is probably one of my favourites: eel with radish, wasabi, and wakame. The eel comes from Giethoorn, the radish from our own garden, and the wasabi and wakame from Japan. So it’s two countries in one dish.”

Boat-captain chef

We leave from our own jetty and sail through picturesque Giethoorn and its beautiful countryside on a relaxing one-and-a-half to two-hour journey. Farmer’s son Martin Kruithof (b. 1960 ) served as a chef in the army, and then went abroad, working in three-star restaurants in Paris and Düsseldorf. In 1993, he returned to his roots in Overijssel. As patron cuisinier of the Giethoorn restaurant De Lindenhof, he gained his first Michelin star in 1996 and his second in 2005.
